Ingredients

Red Cookie Layer:

  • 17.5 ounces of sugar cake mix
  • 1/2 cup butter, softened
  • 2 tablespoons of flour
  • 1 large egg
  • 1/3 cup Andean Peppermint Crunch or crushed peppermint
  • Red food coloring

White Cream Cheese Layer:

  • 8 ounces of cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 1 cup heavy whipping cream

Green Pudding Layer:

  • 3.3 ounces of instant white chocolate pudding mix
  • 3 cups cold milk
  • 1/2 cup melted white chocolate chips

Topping:

  • 2 cups cold whip
  • 1/4 cup Andean Peppermint Crunch or crushed peppermint
  • 1/4 cup mint chips

Instructions

Red Cookie Layer:

  1. Preheat oven to 350 °. Line a 9 x 13 inch baking sheet with parchment paper and spray with nonstick spray.
  2. In a large bowl, add the cake mixture to sugar, butter, flour, and eggs, stirring well. Once well blended, add a pinch of peppermint andes and mix.
  3. Gradually add red food coloring until you get a pretty Christmas red.
  4. For a thick crust, put all the dough into the pan and spread evenly while pressing. If you want the crust to be slightly thinner, divide the dough in half and press half of the dough into the bottom of the pan. The other half can be used for cake.
  5. Place in the oven and bake for 20 minutes until the edges are lightly browned. For a thinner version, you may need to remove it in 15 minutes.
  6. Cool thoroughly before adding layers.

White Cream Cheese Layer:

  1. Using a mixer, beat cream cheese, powdered peppermint sugar extract in a large bowl.
  2. When combined slowly add the heavy cream and whip to form stiff peaks.
  3. Spread evenly over the cooled cake layer. Put it in the refrigerator or freezer for 30 minutes to help set the layers.

Green Pudding Layer:

  1. Using a mixer, beat the milk and pudding squares in a large bowl. Beat until thickened.
  2. Add the melted white chocolate chip and beat until combined.
  3. Add green food coloring a little at a time until you are satisfied with the color.
  4. Distribute over the white layer and return to freezer or refrigerator for the next 10 minutes.

Topping:

  1. Spread the cold whip over the green layer and sprinkle the peppermint andes crunch around the surface. Sprinkle mint chips on top.
  2. Freeze until ready to serve.
