These baked potato slices are very easy to make topped with melted cheese, Italian seasoning, crispy bacon, and served with sour cream for dipping! I promise, this will make anyone a potato lover.
These are like stuffed potato skins, hasselback potatoes, and baked potatoes, all rolled into one. They are Crispy on the outside, warm, and soft on the inside. Serve them as an appetizer for parties or as a side dish to pair with steak, chicken, or burgers!
Baked Potato Slices Recipe
Prep Time: 10 minutes | Cook time: 40 minutes | Yield: 5 Servings
Ingredients
- 3 Russet Potatoes- The best consistency for baking as they can be crunchy on the outside and soft on the inside.
- 1 tablespoon of Olive Oil, Vegetable Oil, or Canola Oil all work well.
- 2.5 cups cheddar cheese- shred yourself from the block at home for best results. I like using Cabot.
- 6 slices of Bacon- High quality bacon is a must. (Otherwise, all of them are fat.)
- 1 tablespoon Italian Seasoning
- 2 Green Onions - For garnish
- Sour Cream– For Dipping.
How to Bake Potato Slices
- Preheat oven to 375 degrees. Remove the bacon and set aside for 5 minutes (this makes it crunchier).
- Rub the russet potatoes clean and cut into 3/4-inch slices. These are thick enough that they don't shrink into potato chips but runny enough to cook well. Use a pastry brush to coat the top with olive oil. Turn and repeat. Season with salt and pepper.
- Bake the slices on a baking pan in the oven for 26 minutes.
- When the potatoes are roasting, cook the bacon over low heat until it is crispy. Use kitchen tongs to turn it over periodically to cook evenly. Set aside when done, let the bacon drip.
- Remove the potato slices from the oven and grease both sides of the potato slices with bacon drips. Turn and repeat. Bake for another 10 minutes. Meanwhile, crush the bacon.
- Reduce heat to 350 degrees. Sprinkle the potatoes with grated cheese and bacon. Return to the oven for 5 minutes, until the cheese is melted and golden brown.
- Remove the slices from the oven. Sprinkle with Italian spices, then sprinkle with green onions. Serve with sour cream and enjoy!
