The actual process for making grilled chicken tacos is really easy. Just microwave the corn tortillas to make them soft, fill halfway with toppings, fold, and cover with the second baking sheet and bake.

If you're wondering, placing a second baking pan on top ensures the tacos stay covered during baking and helps seal the edges with melted cheese. This prevents the contents from falling out during storage and reheating.

Can I Air Fry Instead of Bake?

You could air fry these chicken tacos, but you'll want to put something on top anyway for the same reason above. And since every air fryer is different, you may want to reduce the temperature from the recommended recipe (400F in the oven vs maybe 360F in the air fryer) to prevent burning.

How to Reheat Baked Chicken Tacos?

These chicken tacos are best reheated in an oven or air fryer. I'll reheat it to the same temperature you cooked it for 2-4 minutes. They won't take long to get completely crunchy and warm.

You can use the microwave, but the shells will probably be a little chewy instead of crunchy.

Baked Chicken Tacos Recipe

Ingredients

  • 6 Extra Thin Corn Tortillas
  • 6 ounces Cooked Chicken Breast, chopped or grated
  • 56g Grated cheddar, or cheese of your choice

Instructions

  1. Preheat oven to 400F.
  2. Wrap the tortillas in slightly damp paper towels and microwave for 45-60 seconds, turning them halfway. (This will make the tortilla easier to fold.)
  3. Add the chicken and paprika to one and a half tortillas. Sprinkle with cheese before folding. Press lightly to cover each taco. (If you see torn tortillas, you will need to bake the tortillas for another 15-30 seconds.)
  4. Place a baking sheet or flat surface with a little weight on top of the taco to press it down. This avoids the tacos from opening during baking and helps the cheese to completely cover the tacos so they stick together after baking.
  5. Bake for 8-12 minutes or until tortillas are golden brown. Be careful not to burn it. (If you're having a hard time getting them crisp, take the second pan near the end of cooking because the tacos will be closing by then.)
