This Mediterranean chicken dinner made in a skillet is so creamy and delicious. Perfect for evenings, with flavors everyone will love - you'll be fighting for leftover sauce! You won't believe how easy and quick it is to cook.

Mediterranean Chicken Dinner Recipe

Prep Time: 3 minutes | Cook time: 17 minutes | Yield: 4 Servings

Ingredients

  • 1 pound boneless skinless chicken breast - slice it into cutlets, or just buy it chopped from the grocery store!
  • 2 tbsp butter - I used salted butter, but you can add olive oil or unsalted butter. Make sure to taste the seasonings and adjust if necessary.
  • 1 onion - finely diced, we want the small, even onions
  • 4 garlic cloves - chopped! Feel free to double the amount. Garlic is delicious
  • 12 ounces of roasted red bell peppers - you can bake them yourself or buy a jar. I like what is packed in water versus what is packed in olive oil.
  • 2 1/2 cups chicken stock - make your own chicken stock, or pick it up at the store.
  • 7 ounces of GREAT tasting cream cheese for that matter, a concoction of garlic, or sun dried tomatoes work well. Ordinary is fine too!
  • 2 cups spinach - these are baby spinach leaves.
  • 2 cups of freshly cooked pasta - whatever you like! pasta shapes like penne, rotini, ziti, farfalle etc are great choices.

How to make this recipe

  1. In a large skillet, melt the butter. Any skillet will work, non-stick pan or cast iron will do.
  2. Season the chicken breasts and cook over medium-high heat until browned and cooked. (About 3-4 minutes per side - need 165F in the middle). Move to a plate and keep warm.
  3. In the same skillet, cook the onions until soft (I deglaze the skillet with a little broth too), then add the garlic and roasted red pepper.
  4. Season with salt and pepper.
  5. Cook for 2 minutes then add cream cheese and remaining stock.
  6. Beat the sauce until smooth, then simmer for about 7 minutes - let the sauce to reduce and thicken.
  7. Add spinach and add to the sauce until wilted.
  8. Add chicken and any juices back to the pan and let it warm.
  9. Place the pasta, add the chicken, and spoon a nice sauce on top.
  10. Enjoy.
